LEEK & GOAT CHEESE TART
Leeks are an highly nutritious natural food and you should definitely include them often into your diet. Especially while in season. So here is a super simple and delicious leek based recipe for you.
Makes 1 tart - 4 people
Ingredients:
3 small to medium leeks
6 sheets of filo pastry
250g soft goat cheese
25 ml water
Extra virgin olive oil
Herbes de Provence
Salt & pepper
Method:
1- Rinse the leeks and cut them into 2 cm sections. Steam them for 10 min. They should be tender but do not over cook as you want them to keep their shape.
2- Preheat the oven to 180 °C (th. 6). Brush 6 brick sheets with a little olive oil, then layer them in a tart tin.
3-Prepare the garnish by mixing the goat cheese, water and olive oil with a fork. Then add 1 tsp of herbes de Provence and season to taste.
4-Divide the goat cheese mixture over the tart tin. Then place the leek rings. Sprinkle with a little herbes de Provence and black pepper. Bake for 30 min.
