CHICKPEA SAVOURY PANCAKE
Chickpea savoury pancake with carrot, onion, black olives and sage.
A delicious and quick recipe to make who was inspired from the traditional socca that we eat in Nice, in the south of France. The combinaison of carrot and sage together is also very traditional in Provence.
It can be served hot, warm or even cold. It is perfect with a salad and will be the star of all your picnics.
Ingredients:
150g chickpea flour
350ml of water
4 tbsp extra virgin olive oil
½ carrot, chopped
½ red onion, chopped
70g black olives
2 pinches of sea salt
1 pinch of black pepper
1 tsp herbes de Provence
6 leaves of sage
Method:
Preheat the oven to 180 °
1- In a salad bowl gradually mix the water with the chickpea flour using a whisk. Then add olive oil, carrots, onions, olives, salt, pepper and Provence herbs.
2- Pour into a pie tray previously oiled, decorate with sage leaves and bake for 30 minutes.
Variations:
Add goat cheese (vegetarian)
Vary the vegetables according to the seasons and tastes
Finish on the grill for a more crisp effect on top
