LAVENDER & HONEY BAKED FETA

(serves 1-2)

This is the perfect Mediterranean starter: it is quick to make, cheesy, warming and so delicious. Perfect served with sourdough bread and a glass of vino! 🍞🍷It is all about simplicity I think. Happy cooking!

Ingredients:
- 1 block of feta cheese (quality is essential here)
- 1 sheet filo pastry
- Extra virgin olive oil
- 1 tbsp honey
- 1 tsp herbes de Provence - buy HERE
- 1/2 tsp lavender (edible)
- Black pepper

Method:
Preheat oven to 180C.

1- Use a pastry brush (or your fingers) to brush about 1tsp of olive oil over the filo. Place the feta cheese at the bottom of the filo and roll like a parcel to close. Brush a little bit more olive oil over the filo and place onto a baking tray.

2- Drizzle with honey, sprinkle with herbes de Provence, lavender and season with black pepper.

3- Bake for 15-20 minutes, until golden and crisp. Serve warm with sourdough.
