COURGETTE, FETA AND OLIVE CAKE

Have you ever try to make or eat a savoury cake? These “cake salé” are very popular in France. We serve them cut in cubes with aperitifs 🍷before dinner, or cut in slices with a green salad. 🥗 They make great presents too, and are amazing as picnic food. You can play around with flavours, use smoked salmon, ham or keep it veggie. It is quick and easy to make so give it a go! Happy cooking!

Ingredients (makes 1 loaf):
• 200g self raising flour
• 3 eggs
• 1 courgette, cubed
• 2 slices of bacon, chopped
• 1 tbsp herbes de Provence (or any dried herbs: oregano, rosemary...)
• 100g feta, cubed
• 70g black olives
• 100g extra virgin olive oil
• Black pepper

Method:

Pan fry the courgette, bacon and herbes de Provence for 5 minutes over medium/high heat.

Preheat the oven to 180C
In a mixing bowl combine the flour, eggs and olive oil until smooth. The mixture should be pretty thick, and that’s because we are using a courgette which will release moisture.

Fold the feta, olives, courgette and bacon in the batter. Season with black pepper. The briny olives, feta and bacon should had enough salt to the cake.

Pour into a greased loaf pan and bake for 45 minutes, until golden and cook through.
