WALNUT CRUSTED SALMON WITH KALE SALAD

A few days ago I shared a post about foods that can help with anxiety. I mentioned leafy greens, walnuts and salmon a few times, so here is a quick recipe using the 3 of them: my walnut crusted salmon and kale salad. 


Ingredients (serves 2): 

For the salmon:

  • 2 salmon fillets

  • 1 cup of crushed walnuts

  • 2 tbsp honey/maple syrup

  • 1 tsp wholegrain mustard

  • 1 tsp smoked paprika

  • 1 tbsp olive oil

  • Salt and pepper

For the salad:

  • 80 g kale

  • 2 grated carrots

  • 1 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • salt and pepper


Method:

Preheat the oven to 180C/160 fan/4 gas mark. 

In a bowl combine the walnuts, honey/maple syrup, wholegrain mustard, smoked paprika, olive oil, a pinch of both salt and pepper. 

Use a clean tea towel or kitchen paper to pat dry 2 salmon fillets. 

Drizzle the bottom of an ovenproof pan with olive oil. 

Place the salmon skin side down in the pan, and top with the walnut mixture. Pan fry over high heat for 2-3 minutes, then bake for 7 minutes. 

In the meantime, in a bowl massage together the kale, carrots, olive oil, apple cider vinegar, salt and pepper. Serve alongside the salmon.
