PROVENCAL MUSSELS

A quick Provencal mussel recipe that is packed with flavours! Bon appétit!

Ingredients (serves 2):
- 1 kg mussels
- 2 shallots, chopped - Parsley, chopped - 200 ml white wine - 1 tbsp plain flour
- 1 lemon - 1 carrot, chopped - 1 oignon - 1 bay leaf - 1 tbsp butter - Salt and pepper For serving: Rice or bread

Method:
1- Rinse and wash mussels - remove hairy bits. Discard any broken mussels.

2- Place the mussels in a saucepan, with the carrot, onion, parsley, bay leaf and a good drizzle of white wine. Heat up over high heat, until the mussels open up. Mix well and cook for 5 minutes, until all the mussels have have opened. Turn off the heat.

3- In another pan, add 1 tbsp butter and cook the shallots until fragrant. Add the flour, the rest of the white wine and some of the mussel water. Cook for 1 minute, then add the mussels. Toss well and season to taste with salt and pepper.
Serve with rice or bread. Enjoy!
