FESTIVE VEGETARIAN TRAY BAKE
Festive Tray Bake is the way to go for quick, delicious and nutritious meals!
Ingredients (serves 2):
• 400 g veggies of choice (carrots, parsnip, aubergine, peppers, celeriac…)
• 1 can chickpeas or beans of choice, drained and rinsed
• 1 can chopped tomatoes
• 2 tbsp rose harissa pesto
• 3 garlic cloves, grated
• 1 tsp ground cumin
• 3 tbsp olive oil
• 3-4 tbsp tahini
• 3-4 tbsp parsley or basil, chopped
• 4 tbsp pomegranate seeds
• Salt and pepper
Method:
Preheat the oven to 200 C/180 fan/6 gas mark. Chop the veggies into small bite sizes and place in lined baking tray. Drizzle with olive oil and season with a pinch of both salt and pepper. Toss to coat and roast for 20 minutes.
In a mixing bowl combine the harissa pesto, garlic, cumin, chopped tomatoes, chickpeas, and a pinch of both salt and pepper. Pour the chickpea mixture over the roasted veggies. Toss to coat and put back in the oven for 15 minutes.
Serve with a generous drizzle of the tahini, fresh herbs and pomegranate seeds.
