SPICY CRAB AND BRUSSELS SPROUTS SAFFRON SPAGHETTI

Welcoming the weekend with this under 30 minutes Spicy Crab and Brussels Sprouts Saffron Spaghetti recipe. This is not your average crab spaghetti. This is a wintery and festive version with fried garlic, fiery chilli flakes, shredded brussels sprouts, white wine and saffron. This is mouth-wateringly delicious, and a great pasta to serve any night of the week. 

Ingredients (serves 2):

  • 4 large garlic cloves, sliced

  • 150 g white crab

  • 200 g spaghetti 

  • A pinch of chilli flakes

  • 60 ml white wine

  • A pinch of saffron 

  • 90 g brussels sprouts, shredded 

  • 2 tbsp olive oil 

  • Salt and pepper 

Method: 

Bring a large saucepan of salted water to the boil. Add the spaghetti and cook until al dente. Place the saffron in a small ramekin and cover with 2 tbsp of boiling water. Set aside to infuse until needed. 

In the meantime, heat the olive oil in a large frying pan. Add the garlic and chilli flakes and cook over low heat for 3-4 minutes, until fragrant. 

Add the brussels sprouts and season with a generous pinch of sea salt. Cook for 3-4 minutes over medium high heat, then add the white wine, crab and saffron water. Cook over medium-high heat for 4-5 minutes, then add the drained pasta. Turn off the heat, toss well, season to taste with salt and pepper and serve. Bon appetit!
