CREAMY PARMESAN POLENTA & RATATOUILLE

A delicious and comforting dish!

Ingredients (serves 3/4):
- 1 aubergine, chopped - 1 courgette, chopped
- 1 pepper, chopped
- 1 tomato, chopped
- 1 onion, chopped - 1 chopped tomato can
- 1 tbsp dried herbs
- 1 bay leaf
- 2 cloves of garlic
- 2/3 tbsp Parmesan, grated
- 1 tbsp butter
- Olive oil
- Salt & pepper
- Polenta

Method:
In a saucepan cook the aubergine in a little olive oil for 5 minutes.
Add the other veg, bay leaf, dried herbs and season with salt and pepper. Cook 5 minutes.
Add the garlic, chopped tomatoes and a glass of water. Bring to the boil, cover and simmer for 25 minutes. Stir often.
Meanwhile cook the polenta in boiling water. When cooked, add grated Parmesan and butter. Serve hot with the ratatouille.
