Gluten-free and Sugar-free Cinnamon Apple fritters

I adore cooked apples and fritters. But the recipes out there are often too greasy and sugary.

This recipe is gluten-free, sugar-free and oil-free, but still delicious! You can totally use normal flour if you aren’t gluten intolerant (remove xanthan gum) . The cinnamon and peanut butter sauce have wonderful sweet flavours so no needs to add any refined sugar. And I am using salted butter to cook the fritter instead of oil, which I personally prefer.


Makes: 6 fritters

Prep: 10 min  Cook: 5 min Total: 15 min

Ingredients:

  • 1 medium apple, sliced

  • ½ cup gluten free flour

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • ½ tsp xanthan gum

  • 1 cup almond milk

  • 1 egg

  • 1 tbsp peanut butter

  • 2 tbsp water

  • Salter butter for cooking


Method:

1- In a bowl mix together flour, cinnamon, baking powder and xanthan gum. Add the egg and milk. Stir until combined.

2- In a small bowl, whisk the peanut butter and water together until smooth.

3- Melt the butter in a pan. Dip the apple slices in the batter and cook at medium heat for about 30 seconds on each side. Rest the fritters in kitchen paper for a few minutes to remove all excess butter.

Plate up and serve with the peanut butter sauce.
