Mulled cider with persimmon and spices
Nothing like a hot, spiced cider to warm you up in the cold autumn evenings. I have twisted the traditional recipe by using an underrated fruit; persimmon.
My recipe is quick, easy and really rather good!
Servings: 6 glasses

Ingredients:
1 L dry cider
1 persimmon
1 cinnamon stick
5 cloves
1 vanilla pod
1 tsp nutmeg
1 tsp ground allspice
1 bay leaf
3 tbsp honey
Technique:
1-Make persimmon slices and halve the vanilla pod lengthways.
2-Put 1 cup of the cider and all the other ingredients into a large saucepan. Bring to the boil and reduce to half (about 3 or 4 minutes). Do not do this with all the cider, as you don’t want to burn off the alcohol.
3- Turn the heat down and add the rest of the cider. Simmer for a couple of minutes.
Serve in heatproof glasses or mugs and enjoy!
