FOOD WASTE CHICKEN STOCK

Here is my delicious food waste chicken stock recipe! I like to waste as little as possible when I am cooking, so I am using chicken bones and carcass from the day before roast and I am adding all my vegetables scraps and extra flavours. For a meat free stock, follow the same steps without the chicken and with more veg scraps.

Great recipe to use in stews, soups, sauces or even to cook risotto and noodles. Enjoy!

Ingredients:

  • 1 roasted chicken bones and carcass

  • Vegetables scraps (parsnip, carrot, onion, garlic, cauliflower leaves…)

  • 3 bay leaves

  • 2 sprigs of rosemary

  • ½ tsp peppercorns - crushed in mortar 

  • 1 tsp sea salt 

  • Water - to cover

Method:

Step 1: Add all the vegetables scraps and the chicken bones into the saucepan.

Step 2: Cover with water, bring to the boil and then simmer for 3 hours.

Step 3: Pass through a fine sieve & store into a jar. Let cool before closing the jars.

Store the chicken  in the fridge for up to 3 days or in the freezer up to 1 month. 

You can also freeze it in ice-cube trays.
