ZERO-WASTE CAULIFLOWER STEAK

Serves 2 


This zero-waste recipe is vegan friendly and super tasty. I celebrate the whole cauliflower by cooking it all - including the leaves who become so buttery and delicious when cooked. It only requires a few ingredients and can be made under 30 minutes, so I think you are going to love it. Happy cooking!


Ingredients:

  • 1 cauliflower

  • 300ml oat milk 

  • 2 cloves of garlic, peeled

  • 1 bay leaf

  • 1 tsp herbes de Provence

  • Zeste of 1 lemon

  • 1 tbsp capers

  • Olive oil

  • Salt & pepper


Method: 

1- Remove the cauliflower leaves. Cut the biggest ones in half and set aside. 

2- Resting cauliflower on stem, cut in half from top to bottom, creating two lobes with stem attached. Trim the outer rounded edge of each piece to create two 1.5 cm thick "steaks". 

3- Roughly chop the florets and place in a saucepan with the milk, garlic and bay leaf. Cover and cook over low to medium heat for 8-10 minutes, until tender. Then blend in a food processor until smooth - season to taste with salt. 

4- Heat olive oil in a large pan over medium to high heat. Add cauliflower steaks and cook until steaks are deep golden brown. Turn steaks, add the capers, herbes de Provence and lemon zest. Season with salt and pepper. Add the cauliflower leaves and cook for 10 minutes, until the cauliflower stems are fork-tender.

5- In a mortar, crush hazelnuts. To serve, spoon the cauliflower purée onto plates and place steaks on top. Add the cauliflower leaves, spoon capers over and sprinkle with hazelnuts.
