Salmon, quinoa, asparagus, spinach and passion fruit dressing

This salmon salad is one of my go-to lunch when I want an easy but nutritious meal.

Salmon is super healthy and just too delicious. It goes so well with the passion fruit. Believe me, give it a try!

If you are not a quinoa lover, then you can use barleys or brown rice instead.

Ingredients:

2 fillets of salmon

1 bunch of asparagus

70g spinach

100g quinoa

2 passion fruit

Extra virgin olive oil

Sea salt & black pepper

 

 

 

 

Technique:

1- Rinse the quinoa, then place it with 250ml of water and a pinch of salt, bring to the boil then reduce to a simmer and cook for 12 minutes or until cooked through.

2- Blanch the asparagus in boiling water for about 3 minutes.

3- Wash the spinach and open the passion fruits in half. Set aside.

4- In a frying pan heat a little olive oil. Add a layer of baking paper between the olive oil and the salmon. Pan fry the fillets on each side for about 3 minutes. Season with sea salt & black pepper.

5- In a mixing bowl, mix together the cooked asparagus, raw spinach leaves, 1 of the passion fruit seeds, the quinoa, a drizzle of olive oil, salt and pepper.

6- Serve with the fresh passion fruit on the side.
