CELERIAC REMOULADE SALAD

Have you eaten raw celeriac before? It is so good! Nutty, crunchy and so nutritious. Give this classic french salad recipe a go. It is perfect on it’s own as a starter or as a main side alongside grilled meat or fish. It is a great make ahead salad, and can be prepared up to 2 days in advance. Ingredients (serves 2-4):

  • 1 celeriac

  • 50 g mayonnaise/vegan mayonnaise

  • 15 g dijon mustard

  • Juice of ½ lemon

  • 30 g cornichons, sliced

  • 20 g capers, chopped

  • 15 g parsley, chopped 

  • 30 ml water

  • Salt and pepper 

Method:

Peel the celeriac and cut into thin slices. Stack 4-5 slices on top of eachother and cut into thin long strips similar to matchsticks. 

In a large bowl, combine the mayonnaise, Dijon mustard, cornichons, capers, parsley and 1 tbsp of water. Mix with a fork to combine and season with salt and pepper. 

Add the celeriac and toss until evenly combined and all the celeriac is coated with the sauce. 

Chill for at least 1 hour to let the flavours infuse and the celeriac soften. Toss well before serving, and enjoy!
