BAKED PEARS
These 30 minute blue cheese stuffed pears with thyme and honey are the perfect winter starter that everyone will LOVE. Market fresh pears stuffed with creamy blue cheese, crunchy walnuts and seasoned with thyme, then baked. The pears soften lightly, the blue cheese melts, and the walnuts crisp up. Then each pears is finished with a sweet drizzle of honey. So simple, but so delicious. These savoury, sweet, and salty pears scream wintertime.

Serves 2
Ingredients:
3 pears
120 g blue cheese (gorgonzola, roquefort..)
1 tsp dried thyme
20 g walnuts
2 tbsp runny honey
For serving:
60 g rocket salad
1 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
Salt & pepper
Method:
Preheat the oven to 180C/160c fan/4 gas mark.
Cut the pears in half and use a spoon to remove the core and create holes.
Stuff the pears with walnuts and blue cheese.
Sprinkle with thyme and bake for 20 minutes, or until the pears are hot and the cheese has melted.
In the meantime, in a mixing bowl add the rocket, balsamic vinegar and olive oil. Mix until coated and season to taste with salt and pepper.
Divide the salad into two plates and place the pears on top. Drizzle with honey and serve. Bon appetit!
