MEDITERRANEAN ORANGE & OLIVE OIL MADELEINES

My Mediterranean version of the traditional buttery madeleines. Butter free, refined sugar free and super delicious. And YOU should be indulging yourself with these little French spongy cake too. So here is my recipe, let me know what you think. ๐Ÿงก

Ingredients (makes 12):

  • 4 eggs ๐Ÿฅš๐Ÿฅš๐Ÿฅš๐Ÿฅš

  • 60g coconut sugar ๐Ÿฅฅ

  • 30g honey (I use @scottishbeecompany)

  • 80g Extra virgin olive oil

  • Juice of 1 orange 

  • Zest of 1 orange 

  • 155g Organic spelt flour

  • 25g ground almond

  • 1 pinch salt

  • 2 tsp baking powder

Method:

Preheat oven 170C

In a large mixing bowl beat the eggs with a hand mixer then add the sugar and honey. Mix until dissolved.

Mix in the olive oil and orange juice.

Add the flour, almond, baking powder and orange zest. Mix until just combined.

Keep batter in fridge for about 10min.

Grease your Madeleine pan with a little olive oil. Remove batter from fridge, give final mix before filling pan.

Bake in the middle of the oven for about 12-13 minutes. Should be golden brown. Remove from oven and let cool.

Serve with grated hazelnut instead of icing sugar.

These madeleines will keep well for up to 3 days in an airtight container.
