CLEMENTINE OLIVE OIL CAKE

Makes 1 cake / Serves 4-6

What are your thoughts on citrus!? 🍊🍋 Whether I am cooking savoury or sweet recipes, I seem to always crave for some delicious and colourful citrus. And so I have used delicious clementines and oranges to make this cake. Along with almonds, olive oil and honey making it yummy, dairy-free and refined sugar free. If you like your cake sweeter I suggest adding more honey or serving it with a sweet chantilly or whipped cream. I hope you try and love this cake. Let me know if you do?

Ingredients:

  • 200g plain flour

  • 100g ground almond

  • 1.5 tsp baking powder

  • 1 pinch of sea salt

  • 3 free-range eggs

  • 80g olive oil

  • 80g honey + 1 tbsp

  • 2 orange, zested and juiced

  • 2 clementine, sliced

  • 1 clementine, juiced 

  • 20g flaked almond



Method:

1- Preheat the oven to 180C (350F), and brush a cake pan with olive oil. 

2- Whisk the flour, ground almond, baking powder and sea salt together. 

3- In another bowl, mix eggs, honey, olive oil, orange zest, and orange juice.

4- Add the dry ingredients into the egg mixture and stir.

5- Pour into the greased pan, sprinkle with the flaked almonds and decor with 6 or more clementine slices. Sometimes, I like to sprinkle a little caster sugar (1 tsp) all over to caramelise a little but that totally optional.

6- Bake for 25 minutes, until golden and puffed a little. Let cool for 5 minutes before taking the cake out of the pan.
