BUY / STORE…
There are various types of clams, ranging in size and shape. Buy them fresh from your local fishmonger and keep them in the fridge. However be careful not to cover them, as they would die.
COOK…
Clams in their shells can be cooked like mussels; in a little liquid (olive oil and wine wine) over a high heat, covered. Note that any that don't open after a few minutes should be discarded. Clams are wonderful served with pasta and goes well with ingredients such as garlic, tomato and parsley.
Clams without their shells can be pickled, cooked in sauces or even sauteed with garlic and vegetables.
