SALMON MEDITERRANEAN SALAD
A wholesome lunch or dinner recipe packed with Mediterranean flavours. So satisfying, with loads of nutrition, which is all we need right now. Save the recipe to recreate. Happy cooking!

Ingredients (serves 1):
• 1 salmon filet
• 1 small lettuce
• 1 handful spinach
• 1 tbsp pesto
• 30-40g feta
• 1 tbsp flaked almond
• Extra virgin olive oil
• Salt & pepper

Preheat the oven to 190C
Arrange the salmon filet on a oven tray, drizzle with olive oil, season with salt and pepper. Roast for 10 minutes.

Chop the lettuce and place in a mixing bowl along with the raw spinach and pesto. Toss the coat and set aside for a couple of minutes to lightly marinate. If too dry add a drizzle of olive oil.

Place the pesto lettuce into a plate. Crumble the feta and salmon all over. Sprinkle with the flaked almonds. Enjoy!
