PROVENCAL CHICKPEA SALAD

This Provencal chickpea salad recipe is quick and simple, and nutritious. Serve it as a starter, a side, or like here on its own. It is filling, crunchy, fresh and nicely salty with the addition of the olives and anchovies. It keeps well, so you can prepare it ahead of time, which is great for meal planning or healthy lunch on the go.

Ingredients (serves 2):

  • 1 can chickpeas, drained and rinsed  

  • 1 can anchovies, chopped  

  • 3 celery ribs, sliced

  • 1 red onion, sliced

  • 4 spring onions, sliced 

  • 10 black olives

  • ½ bunch of parsley, chopped 

  • 1 tbsp red wine vinegar

  • Extra virgin olive oil

  • Salt and pepper to taste 

Method:

In a large bowl, combine chickpeas, anchovies, celery, red onion, spring onions, olives, and parsley. 

In a small bowl, combine the vinegar, salt and pepper. Add the vinegar and whisk to combine. Pour the dressing over the chickpea salad and toss to combine.
