30 MINUTES GREEN PASTA
Homemade green pasta sauce with broccoli, celery, kale, spinach, garlic, lemon, chilli flakes and a bit of parmesan. The pasta is cooked directly in the sauce making this recipe super simple and ready in 30 minutes. This dish makes for a vibrant pasta bowl that’s perfect for Meatless-Monday, or any other day of the week too.

Ingredients:
200 g broccoli
100 g kale
2 celery stalks
3 garlic cloves
40 g spinach
3 tbsp olive oil
A pinch of chilli flakes
2 tbsp lemon juice
4 tbsp parmesan, grated
150 g pasta (conchiglie rigate)

Method:
1- Prepare your ingredients: Finely chop the garlic. Cut the celery stalks in half lengthwise and slice into small pieces. Cut the broccoli into small florets. Remove the stems from the kale, and roughly chop.
2- Cook the greens: In a large frying pan, add the olive oil, garlic and chilli flakes. Cook over medium heat for about 30 seconds, until fragrant. Add the broccoli, celery and kale. Pour 700 ml of water and cook covered for 10 minutes. Add the spinach and season with a generous pinch of both salt and pepper.
3- Blend the greens: Add half of the greens into a food processor, along with the cheese, lemon juice and 100 ml of water. Blend until smooth and pour back into the pan.
4- Cook the pasta: add the pasta directly into the pan, give everything a good stir and cook covered for 10 minutes. The pasta will cook into the green sauce and soak up all the flavours. Remove the lid and cook for another 2 minutes, or until al dente. Season to taste with salt and pepper.
5- Serve: Divide the pasta into two plates and serve. If you like more cheese feel free to add extra grated cheese on top.
