CAYENNE PUMPKIN CROQUETTES
These baked croquettes are so delicious and easy to make. Crunchy and spicy on the outside, soft and cheesy on the inside. You need to give these a try!
Ingredients (serves 2):
For the pumpkin mixture:
½ large pumpkin
1 handful of grated parmesan
2 cloves of garlic, chopped
1 tsp ground nutmeg
Salt and pepper
For the pumpkin breadcrumbs:
1 handful of panko breadcrumbs
1 tsp cayenne pepper
1 good pinch of salt
2-3 tbsp vegetable oil
Method:
Bake the half pumpkin covered with foil, at 180 C/160 fan/4 gas mark, for 1 hour, or until very tender.
Spoon the flesh out into a bowl, and use a fork to mash. Mix with chopped garlic, grated parmesan, and nutmeg. Season to taste with salt and pepper.
Spoon about 1 tbsp of the pumpkin mixture out of the bowl, and form into a cylinder. Place on a lined baking tray, and repeat with remaining mixture.
In a bowl, combine the breadcrumbs, cayenne pepper and salt.
Roll the pumpkin cylinders in the breadcrumbs to coat and place back on to the baking tray.
Lightly brush each croquette with oil (I used vegetable oil spray but you can gently brush or drizzle).
Bake at 190 C/170 fan/5 gas mark for 20 minutes, flip and bake another 20 minutes, or until golden and crisp.
