BALSAMIC PARSNIPS & CARROT SALAD

These came out so sticky and delicious. I served them with fresh herbs and nuts for extra flavour and texture. You need to give this winter salad a try!

Ingredients:

  • 250 g parsnips

  • 250 g carrots

  • 2 tbsp balsamic vinegar

  • 2 tbsp honey (or maple syrup)

  • 1 tbsp extra virgin olive oil 

  • 1 tsp herbes de Provence 

  • Sea salt & black pepper  

Method:

Peel and quarter your veggies. Place them into a baking dish, then add the balsamic, honey, olive oil, salt and pepper. Give it a good toss and roast at 190C/170c fan/5 gas mark for 30-40 minutes, or until tender and nicely caramelised. Serve hot or cold with fresh herbs and nuts/seeds of choice. Enjoy!
