ANCHOVY & BEAN STEW
If you are looking for a cheap, quick and packed with flavour recipe this is the one. It is so delicious I would recommend made a bigger batch and freeze it for a day you don’t feel like cooking. Happy cooking!
Ingredients:
1 can anchovies
1 can cannellini beans, rinsed and drained
4 tomatoes, roughly chopped
1 red pepper, cubed
4 garlic cloves, chopped
1 tbsp herbes de provence (or oregano)
A pinch of chilli flakes
3 tbsp olive oil
Salt & pepper
1 handful of fresh coriander (or basil, or parsley)
1 lemon, zested and juiced
Method:
Place a large frying pan over a medium heat.
Add the olive oil, garlic, herbes de provence, chilli flakes and 4 anchovies (serve what's left for serving). Cook for 1-2 minutes, until fragrant.
Add the chopped tomatoes and chopped red pepper. Lower the heat to slow, place the lid on top of the pan and cook for 8-10 minutes, until the tomatoes have started breaking down. Give it a good stir after 5 minutes.
In the meantime, finely chop the coriander. Add the cannellini beans to the pan along with the zest and juice of the lemon. Mix everything together and season to taste with salt and pepper.
Add the coriander and serve with a couple of anchovies on top.
