LAVENDER BISCUITS

Lavender biscuits - 5 ingredient biscuits inspired by the products of Provence.
If you don’t have edible lavender, you can recreate these little biscuits with fennel seeds or cumin seeds. Happy baking!

Total time: 25 minutes

Makes 24 little biscuits

Ingredients:
• 70g ground almonds
• 105g plain flour
• 1 tablespoon culinary lavender
• 50g olive oil
• 55g runny honey (or maple syrup)
• Icing sugar (optional)

Method:

Preheat the oven to 180C/356F. Line a large baking tray with baking paper.

Mix together the lavender, thyme leaves and ground almonds, and flour.
In a large bowl, combine the olive oil, and honey (or maple syrup).

A little at the time, add the dry ingredients to the wet, stirring until a dough forms.
Place the dough between two pieces of baking paper, and roll it to about 1 cm thick.

Remove the top piece of baking paper, and cut the dough with a cookie cutter. Place them on the prepared baking tray. Form a dough with what is left, and repeat until all the biscuit mixture is used.

Bake for 9-10 minutes, until just about golden brown on the edges. Remove from the oven, and let cool. Sprinkle your biscuits with icing sugar and enjoy!
