QUICK SWEET POTATO TOAST

Keeping it simple today with this mouth watering delicious, sweet potato and avocado toast. Toasted sweet potato slices, layered with creamy avocado and spicy pan fried eggs. Finish each piece of toast with a drizzle of extra virgin olive oil or sweet honey for a fresh take on “fancy toast”. A great recipe to serve for a Mother’s Day brunch, for lunch, or even a light dinner. Happy cooking! 

Ingredients (serves 2):

  • 1 large sweet potato 

  • 1 large avocado 

  • Juice of ½ lemon 

  • A pinch of chilli flakes

  • ½ chilli, sliced

  • 4 eggs 

  • 1 tsp dried herbs 

  • 1 tbsp honey 

  • Extra virgin olive oil 

  • Salt & pepper 

Method: 

Cut the sweet potato into 1 cm thick slices, and place in the toaster. Toast for 6-8 minutes, until lightly charred and tender. 

In the meantime, combine the avocado with lemon juice, chilli flakes, a drizzle of olive oil and a pinch of both salt and pepper. 

Heat up a little olive oil in a non-stick frying pan. Fry the eggs until crisp, then sprinkle over the dried herbs, chilli and season with salt and pepper. 

To serve, spread the avocado over the sweet potato slices and top with the eggs. Drizzle with a little honey and enjoy!
